i don´t know how to explain it in english, but i will try to give you some examples.

İstanbul´a gittim (it simply mean, i went to istanbul, it can mean that you are right now traveling to istanbul)

İstanbul´a gitmiştim (it was before, it was some years ago, some months ago, some days ago)

Birkaç yıl önce İstanbul´a gitmiştim.

Hatırlıyor musun, sana bunu vermiştim ama bir teşekkür bile etmemiştin.

i am not sure if onunla en son ocakta görüştüm is correct {#emotions_dlg.think} , but i now görüşmüştüm is correct in that case.

Let´s wait for native speakers {#emotions_dlg.bigsmile}

It is similar to past perfect tense in English.

Onu gördüm means I saw her.

Onu görmüştüm means I had seen her

Both of them are correct. It is a matter of choice.

to meet : tanışmak (to meet someone whom you never know for first time and start to introduce each other of you)

to meet : görüşmek (to meet someone whom you know, to gather with him/her so as to spend time together or to be in dialog etc.)

One uses both of these by "ile (with)".

Onunla en son Ocak´ta görüştüm./görüştük. (I/we last met him in January. (purely: I last with him in January. / I and he last met in January.))

son = en son  : last

Ocak : January

görüş+di(simple past)+m(personal suffix)--->görüştüm (I met)
