'Ben bir kuş olup uçmak isterdim.'
"I'd want to be a bird and fly away"
İ guess you mean: İ'd like to be a bird and fly away'
And İ have two doubts:
1. olup ( comes from verb olmak (to be), am İ right? )So, suffix '-UP ' ...what means?
2. uçmak means 'fly' where is the complement 'away'. İ mean, for you can make a translation you must make use of imagination?

'up' is the ending that joins two verbs - so instead of translating I want to be a bird and I want to fly away you use the 'ip' ending (with vowel harmony) to joint the two verbs to make the sentence 'I want to be a bird and fly away'.
Uçmak translates as 'to fly away' on the site dictionary.
I am sure a native Turkish speaker can explain the 'ip' suffix to you better than I have! But I'm only learning like you!

Qdemir gave an explanation for this.

uçmak means 'to fly' and also 'to fly away'. Sometimes you need a context in order to know the right meaning of a word.
