What confuses me ıs when should I use'her şey' and when 'bütün' because I thınk they are not ınterchangeable!
could someone clarıfy my doubts? teşekkürler!

you can use 'her şey' for 'everything'. but 'bütün' means 'all of' something. For example,

Her şeyi yanına aldın mı? /Have you got everything with you?

and,

Bütün öğrenciler oraya giti. /All of the students went there. (Here you can't say 'Her şey öğrenciler..' )
