Benzer vs Gibi

Is there a difference between the use of benzer and gibi ???
Are both these sentences OK?
Bu akşam bir Turk gibi yiyorum.
Bu akşam bir Turk benzer yiyorum.
This evening I am eating like a Turk

Benzer and gibi are similar meaning but they are not interchangeable in grammar.
benzemek - gibi görünmek.
Examples:
He looks like M.Jackson. --> M.Jackson'a benziyor.
He looks like M.Jackson. --> M.jackson gibi görünüyor.
It looks like it will rain--> Yağmur yağacak gibi görünüyor.
It looks like it will rain--> Yağmur yağacağa benziyor.
Adam gibi adam --> A man like a real man.
Adam adama benzese bari --> I wish he looked like a real man.
Adam gibi adam olsa bari--> I wish he looked like a real man.
Benzemek is a verb.
I have no idea how to call 'gibi'. I wasn't good in my Turkish class. 
Bu akşam bir Turk gibi yiyorum.
Bu akşam bir Turk benzer yiyorum. --> should be Bu akşam ki yemek yiyişim bir Türk'e benziyor.
This evening I am eating like a Turk

As gramatical way you can say,
Bu akşam bir Türk gibi yemek yiyorum. OR,
Bu akşam yemek yemem, bir Türk'un yemek yemesine benziyor.
AMAAAAAAAAAAAAAAAAAAAAA;
HOW DO WE TURKS EAT?
The meaning seems a bit OFFENSIVE.Can you explain what this sentence means?I don't understand as a Türk.

"Eating like a Turk" means "eating the types of food that a Turk eats" - or Turkish food! No offence was intended, simply the first example I could think of as I was cooking at the time

Hmmm, in case of me, no problem, if you can eat like I eat.
A lot, I mean.
But if you are intended to say that you are eating Turkish food like all Turks eat, --- well, not all though, it has been so long since I ate Turkish food, (viva Korea) ---
Bu akşam bir Türk gibi yiyorum sentence is not clear enough to give the clue. So it is better to add to 'Türk yemekleri' between gibi and yiyorum.
In this case you cannot make the same sentence using 'benzer'.

OMG! I don't believe that you separated all "-ki" suffixes although it must be together!!!
"akşamki yemek"
There is not another sentence to separate and put a separated "ki".      |

Correction ->
Bu akşamki yemek yiyişim bir Türk'e benziyor.
It was a slip.

examples have always helped me
"gibi" is used in comparative sentences:
e.g. "Bu elma bal gibi tatlıdır" (this apple is as sweet as honey)
"benzemek" is for "look like"/ "resemble":
e.g. "Anneme benziyorum" (I resemble my mother)
