A few months ago, in a private message, i seem to have offended a Turk speaker with this phrase?
"Ne demek istediğini anlayamadım. "
Was this "nonsense" or was it offensive?
I was trying for "what did you want to say"
teşşekürler.

it is perfect and makes very sense 
I don't know a better or politer question to ask what the other wants to say.

Ne demek hırslı ?
İ found it here in the dictionary means
hırslı
1. filled with desire, ambitious.
2. angry
But my Turkish teacher said it means cautious
So which one is which ?!

Hi
Either you misunderstood, or change your Turkish teacher!
Hırslı is ambitious and pushy.
For cautious I would use dikatli, temkinli, or even the more old-fashioned ihtiyatlı.
