Everyone going to China needs a visa! If it is just for a holiday, then I would think it is straightforward, but if you need a business visa, then you have to have a letter of invitation from a Government run organisation (which is most businesses). And apply for the visa through either an agency or the Chinese Embassy in Turkey. If it is anything like the UK, it is a nightmare to get a visa from the Embassy, I always use an agency.
Macau is possibly different, and would be like Hong Kong. You would most likely go to Hong Kong before you go to Macau as there are regular ferries so therefore you would not need a visa. If you were travelling internally for instance, flying from Shanghai, you would be able to fly to Shenzhen or Tanzhou airports which are both still in China. From Shenzhen to Macau you can get a ferry. From Tanzhou it would be a taxi ride but there might be special taxis.
You can buy single trip visa's at the border crossing, but these do not allow you to travel in and out of China/Hong Kong/Macau more than one trip.
There is plenty of information on the internet and if you go to the Chinese Embassy website in Turkey it should tell you there the requirements.
The above is all from my own experience and granted I am British, but I believe the visa requirements would be the same.
