I know that all of these words mean 'but'.

Like "but", ama-fakat-ancak express a direct contrast between two things or situations. And their uses are almost the same.
(Sentence), ama/fakat/ancak (Sentence)
(Sentence). Ama/Fakat/Ancak (Sentence)
Examples:
Bu çok güzel, ama/fakat/ancak (bu ev) pahalıdır.
(This house is nice, but expensive.)
Şiir çok uzun. Ama/Fakat/Ancak (şiir) hoş.
The poem is too long. But it is nice.

sometimes "ancak" may have a different meaning which is "only if"..
bunu ancak sen de benimle gelirsen yaparim.
i will do this only if you come with me, too.
