eggplants with tomatoes

4 eggplants
3 tomatoes
4 gloves of garlic
150 ml. olive oil
salt


Peel eggplants like stripes. Dice chop and put them in salty cold water. Put olive oil on a deep pan(pot will be usefull too)wait until it gets hot enough.Strain eggplants add them on pan. Mix them for 5 min. Close the lid, turn the glow on low. 20 min. later, eggplants will be soft, add dice chopped tomatoes and garlic. cook it for 10 min. more. Serve it cold.( keep it in fridge, it will be good for 7 days.)

asli! great recipes. I tried this one my husband loves it... I am in need of more vegetarian dishes since he eats zero meat....zero
