Can I ask where the 'var fits in?

Are you in fact saying (I there is a need for you)?

Why not just say (sana ihtiyacım) to you I need???

This language confuses me so much......

-e ihtiyaçım var = literally means "I have the need of..."

Dont give up turkish, it is a difficult language, yes but I realized that there are some things you just have to learn the way they are and not to ask why it works like that! Mesela " -dik " object participle!!

There are several ways to say ' I need ' ın turkısh,
I need to talk = Konuşmam lazım
I need help = YardımA ihtiyacım VAR
I need you = Sana muhtacım (from the verb 'Muhtaç Olmak'
