Let me tell that Lüfer and Çinekop are not different species. Young (and small) Lüfer are called Çinekop. For more information I recommend Turkish Wikipedia.
About the taste.. Well, I think it's pretty hard to explain the taste of some specific food to someone who has never tasted it before. Like trying to explain some color to a blind person.
Simply I can tell that these are quality fish. Lüfer has white and not-so-smelly meat and is great when grilled. Kalkan is regarded as select fish, is scarce and sold at high prices. A fully grown adult costs about €60. Because of this, Kalkan is generally found at classy restaurants.
On the other hand, there is Hamsi (Anchovy) that's dirt cheap but has a heavy smell(according to me, at least). But there are many who love the taste of it, so I think it isn't wise to decide without giving a try.
