1.2. More than
If you want to compare two nouns with respect to an adjective, the structure used in English is as follows:

noun1 is more adjective than noun2

Ex1: Ahmet is more hardworking than Mehmet.
The structure to express the same meaning in Turkish is as follows:

noun1 noun2-den daha adjective

Ex1: Ahmet Mehmet´ten daha çalışkan. (Note that the ´ sign is used to separate private names from their suffixes)

QUESTION can you do the same for less than

noun1 noun2 - den daha az adjective

I think you use just ´az´ not ´daha az´

It should be "daha az"

noun1 noun2´den daha az adjective
Ahmet Mehmet´ten daha az çalışkan

how about Ahmet Mehmet´ten daha az bir caliskanli adam...do you ever put adamsi or adami ?

You can say:
Ahmet Mehmet´ten daha az çalışkan bir adam.
(Ahmet is a less hardworking man than Mehmet)

i mean like you ever change adam to adamsi or adami like you do for cantasi or kimi....

If you want to use word "adam" in accusative or third person possessive form, you use "adamı".

Adamı gördüm.
I saw the man.

Kimin adamı?
Whose man?

The s in çanta(s)ı is added as a buffer consonant because a suffix that starts with a vowel is added to a word that ends with a vowel. This is explained in the vowel rules lesson:
