Doesn't the interrogative particle always come at the end of the interrogation?

No it can be anywhere in the sentence, you just make sure it is behind the word you want to stress.

Does that mean that the following are correct:
kahve ister misin?
do you want coffee?
kahve misin istersin?
is it coffee that you want?
Or would the last one be:
kahve mi istersin?

kahve ister misin?
would be a general question
kahve mi istersin?
would be, lets say, when someone says "can i have a drink?"
by putting the "mi" on coffee you are basically saying,
"is it coffee that you want?"
