I have been taught that açým means I am hungry. I keep reading açýktým meaning I am hungry.

Can anyone explain the difference?

"Açým" means "I am hungry", while "acýktým" (not with ç ) means "I got hungry"

(acýkmak is the verb)

 so in English we would not use the latter description unless we were telling a story from the past. But in Turkish it is used to describe how you are feeling at the present?

Yes, actually we use "acýktým" more often as you have also noticed.
