İngredients:
- 2 kilograms of spinach (I prefer to put more though)
- 1 chopped onion
- 1/2 spoon of pepper paste (or tomato if you dont want it spicy)
- 1 or 2 tiny sliced green or red peppers
- 1 tomato, sliced in cubes
- black pepper, salt, red pepper (kırmızı pul biberi)
- a small handfull of rice
- minced meat, as much as you like, or don´t put it at all
- a few table spoons of olive oil
Preparation
- mix the chopped onions and peppers well with the pepper paste and put in a pan
- clean the spinach thoroughly, cut off hard edges
- add the spinach on top of the onion-mix
- add the tomatoes on top of this
- sprinkle black pepper, salt and red pepper
- clean the rice and put on top
- put the minced meat on top of this or leave it all out)
- pour the oil over the dish
- put the pan on the fire and cook for a good half an hour on small fire
The dish is ready when the spinach has become soft and dark green (cooked
) and the rice has gone soft. Stir gently. And be carefull to keep the fire low, otherwise your dish will get burned. Now there are variations, most people I know first fry the onions and then add the other ingredients, I used to do it that way too, but by putting the ingredients raw and putting the oil on top of it, I found that the onions become less greasy this way.
Oh and this goes really nice with garlic yoghurt 
As for the minced meat: you can leave it out totally (or use soya-minced meat
as my housemate does, but I dont recommend it
), put in just minced meat, or do as I do: I first knead 1 clove of crushed garlic and a bit of cumin into the meat and then put it on the spinach.
