Simple Potato Casserole

4 Large Potatoes (cut into cubes)


1 green pepper (roughly chopped)


1 red pepper (roughly chopped)


1 medium onion (roughly chopped)


4 large tomatoes (skinned and diced) or 1 can of crushed tomatoes


2 teaspoons of caraway seeds


2 teaspoons of paprika


2 tablespoons of olive oil


Salt and black pepper to taste


 


  


In a large saucepan, brown potatoes in olive oil and cook until all sides are brown.  Add peppers, onions and tomato, caraway seeds and paprika.  Salt and pepper to taste.  Simmer uncovered until all ingredients are soft.  Serve as an entrée or side. 


 


(I like to top mine with croutons)

What the potato dish?  It is something that my Turkish mother in law makes.  The croutons are an added Bed American feature!  See, I can do fusion cooking!!!
