"I heard you say that you speak Turkish."

I think dividing the sentence into two parts, will make it easier to translate:

I heard = duydum 

you say that you speak Turkish = (Sen) Türkçe bildiğini söylüyorsun

(I see from your attempt that you know well how to put a word in -dik form)

Let´s put them together:

(Sen) Türkçe bildiğini söylüyorsun + duydum 

Only thing you have to do now is to change the verb "söyle-" into "-dik" form for the second person singular: söyle + dik + in => söylediğin 

As this part is the direct object of the sentence it needs to take -i : söylediğin+i 

(Senin) Türkçe bildiğini söylediğini duydum.
