Yes I see that he is trying. I really wish I could help him, I have tried,  but I don´t know what to do. And now he believes that I dont care. I am eating my head because of this (if this idiom fits here though?).

 my try:

 Evet onun çalıştığını ( çabaladığını ) görüyorum.Keşke ona yardım edebilsem gerçekten,yoruldum; ama ne yapacağımı bilmiyorum.Şimdi umursamadığıma inanıyor.Bu yüzden kafayı yiyorum.

Evet görüyorum, o çaba gösteriyor.

 I really wish I could help him,

Keşke gerçeken ona yardım edebilsem,

  I have tried but I don´t know what to do.

 Denedim ama ne yapacağımı bilmiyorum. 

And now he believes that I dont care

Ve şimdi O benim umursamadığımı düşünüyor

 I am eating my head because of this (if this idiom fits here though?).

Kafayı yiyorum bu yüzden.

 

Note : The idiom "kafayı yemek" fits here in Turkish. But I dont think it would fit in English.

In english that would be " to go nuts"
