Babamın adı Mehmet.

Why isn´t it "Babam adı Mehmet"? What does the -ın ending mean?

It means: My father´s name is Mehmet.
Because it´s not a verb. It means name. 
His name is-Onun adı.
My father´s name is-Babam
ın adı.

My father´s name is Mehmet

Babamın adı Mehmet.

 

-ın is genetive. It connects "babam" and "ad".
