Can you help me understand the parts of this word.

Hi, in my grammar book it is explaining ´verbless´ sentences eg I am a teacher, you are a student etc. Everything makes sense apart from ´arkadaşlarımız öğrenci´, translated as ´our friends are students´. So, the ´lar´ is the plural, yes, ´ımız´ is the ´our´. But I´d have expected öğrenciler. Is this another case where you´ve already said there´s more than one by using ´lar´ and therefore don´t show the plural of ´students´?

"Arkadaşlarımız öğrenciler" is correct. But it is not neccessary to use "ler" after öğrenci because we understand that they are more than one person when we read arkadaşlarımız. So sometimes we dont make the other word plural.

´To have´ is another example.
kedim var - I have a cat - literally: a cat belonging to me exists
´Var´ in this case functions as a verb, to exist, but it is not a verb per se.

Here there is no need to put "ler/lar".
Indeed, you already know it is plural as the subject is "arkadaşlarımız".
The subject is already plural so you don´t have to put a plural form afterward.
Other examples :
- "Iki balıkçı balık tutuyor" = Two fishermen are fishing.
- "Kedileri çok tatlı !" = His/Her cats are so cute !
