I want to write:

I prefer to do the Turkish class (course) in the mornings.

Sabah Türkçe kursunu tercih ediyorum.

Sabahleyin Türkçe kursunu tercih ediyorum.

Sabahki Türkçe kursunu tercih ediyorum.

Are any of these correct?

The choice is between a morning or afternoon class.

Should I use kursuna tercih ediyorum because the choice is between 2 things?

Henry, if you make sentence of preferance by comparing two options then you can use dative, but normally we would use accusative in order to state our preferance.[choise]

So, your third sentence is ok to use.

Sabahki Türkçe kursunu tercih ediyorum.

I prefer Turkish class which is in the morning[s].

 

we can even shorten it by embedding Turkish , as the type of course is already obvious from the context.

Sabahki kursu tercih ediyorum.

I think you wanted to say I prefer to do attend...

Yes, I wanted to say that ´I prefer to attend the lessons that are in the morning´.
