Demek is to say, so my guess would be it means ´when saying / on saying´.

Example: "Türkiye denince akla Galatasaray geliyor."  (I´m not making this up guys, just found in on Google )

Meaning "When you say Turkey, you think of Galatasaray." 

Güzel ahlak denince by that format means "When you say güzel ahlak..."
