Yemek molamı bitirmeye 5 dakika kaldı.

My lunch break finishes in 5 minutes.

Tatilii bitirmeye 2 gün kaldı.

My holiday finishes in 2 days.

I don´t think it´s correct but I´m not sure. ´Finish´ is the verb so generally you want to conjugate that and put it at the end.

Tatilim 2 gün içinde bitecek.

Bitirmeye would go with another verb:

Onu bitirmeye çalıştı - He tried to finish it.

Grammatically it´s OK but semantically problematic.

It gives the meaning that you are trying to finish your lunch break. As if you are working on it to finish. It´s not that way. Time passes and your break comes to an end.

So these turkish sentences would be better:

Yemek molamın bitmesine 5 dakika kaldı.

Tatilimin bitmesine 2 gün kaldı.
