Hi, I have tried to translate this myself, but am not very good yet.
I will be at hotel tonight at 8 o'clock
Ben bu geçe otel'da saat sekiz.
i miss you and want to see you but if you don't come i will know.
Seni çok özeldim ve seni görmek istiyor, ama eğer gelmiyorum biliyorum.

İt is a good trial,
You just missed a verb in your first sentence,and you got mixed a little bit with personal pronounse at the second one
İt should be istiyorum...because you are the one who want,
and it should be gelmiyorsun, because he is the one who won't come,and you are adressing him as 'you'
İf you just did this,i am sure he would have understood it well

Canlı could you please help me with "gelmezsen" as i haven't come across the "mez" before so i dont know what it means. Is it negative, timeless to get "you don't come"

Sure,
the verb is gelmek as you know, means to come
there is a tense Aorist tense with (r ) suffix,sometimes it be (ır) with some verbs
This tense some more like present simple tense when we want to put it into negative
it take (maz) suffix,except with ben and biz,it takes (ma) suffix
so i used it as gelirsin ..that is in affirmative,
gel + ır + sin
then i put it in negative ,then i added the (se) conditional suffix then (n) is the personal pronoun with sen
So it is like that
gel + mez + se + n ....means if you don't come
