I'm wondering, where is the meaning of "it seems like" in your translation?
Would it be correct to use "konuşuyormuşuz" here?
(I'm still struggling with this tense.. )

if you want me to translate it word by word:
Görünen o ki bu aralar sadece e-mail yoluyla konuşuyoruz.

but its not necessary to make this kinda long sentence.
Word by word translations are not allways reasonable.

It has nothing to do with one-to-one translation; the other way around, her question is fitting well.

Since she does know English (probably better than us) and thus can by herself decide whether the "it seems like" part is unnecessary or not, I won't say anything about the english sentence. On the other hand you may of course find that part unnecessary to translate, (it is your choice), but just for the sake of giving her the correct info about its turkish translation, the little difference between two in English is true with that in Turkish.

Öyle görünüyor ki or Görünen o ki

(Remember it seems to me that translates Bana öyle geliyor/görünüyor ki)

Providing that "konuşuyormuşuz" is used with gibi görünmek together, it would be correct; but this would be more close to "it seems as if"

Son zamanlarda sadece e-posta yoluyla konuşuyormuşuz gibi görünüyor.
Son zamanlarda sadece e-posta yoluyla konuşuyormuşuz gibi geliyor bana.

The latter is much better; but again these are slightly different than the above one.

They translate Miş'li Geçmiş zaman as "they say..."

Konuş(Verb stem of 'konuşmak') + uyor (present tense suffix) + muş (here is miş past suffix) + uz (first person plural)

I think you must first look through this tense a bit if you haven't studied it yet. But for now, here is a line of a turkish poem:

İçindeymişik, yeşilmişik, sazmışık
They say we are in (it), green, rush
