Hmmm...yum...how do you cook them? Do you get the large ones, or the small ones?
FWIW, I only cook the small ones. I cut top thorns off, trim the outer leaves, or remove some of them. They are then put in water with olive oil, vinegar lemon and lots of halved garlic cloves.
Did you see artichokes in Turkey? They sell just the cleaned bottom so they are ready to stuff.

If I am cooking the large ones...I stuff them with a bread and seafood stuffing. If I am cooking the small ones, I usually cook them in olive oil and lemon and serve them over pasta - something simple because they are usually so tasty. The larger ones need more attention.

I wonder it as well. I heard that they have suspicious methods to kill the animals, maybe not suitable for Islam. For that reason, it may not helal. But according to the many resources, there is a saying:
"Müslüman mahallesinde salyangoz satılmaz"
"It can't be sold snail in the muslim district"
"Snail" as snail meat which is not helal meat.
But at least, if it were not helal, I am sure we could see the news about them on the newspapers and tvs.
