One of my favorite Turkish Recipes from Binnur´s......it is a family favorite now.

 

Mushroom Soup

(Mantar Corbasi)

Mushroom Soup
200 gr brown mushrooms, brushed, sliced
1 tbsp butter
1 small onion, finely chopped
2 tbsp flour
1/2 tsp salt, adjusted to your liking
1 pinch black pepper
1 pinch crushed red pepper
2 cups chicken broth, at room temperature
1 Bay leaf
1/4 cup cream, half & half

Saute the onion with butter for a few minutes in a medium sized pot. Take the pot from the heat, add flour, salt, pepper and crushed pepper. Stir using a wooden spoon until creamy without bumps. Slowly add the chicken broth while stirring. Throw in the mushrooms and the Bay leaf. Put back on the stove, stir constantly. When it starts bubbling, turn the heat down to medium-low. Cover with the lid and cook for about 20 minutes.

Add the cream and stir. Turn the heat off, take the Bay leaf out and serve while still hot.

Nope..

This is not a Turkish recipe..

We dont use cream in this soup..

We use yoghurt!!

 Ã love mushroom soup, but i never made it at home, i usually buy it or just eat it out.

Thanks for posting it, im sure will going to try it.

But just a question, it would be also ok to use white mushroom, yes ?

Ým not a mushroom big fan so i dont buy it much and not expert about the differeces between while and brown

But i buy brown canned to add to the meat but i also see fresh white mushroom in the super marker

So in this case would fresh ones be better than canned ?

I have used white button mushrooms, baby portabellas, brown mushrooms, canned mushrooms.....I think you can use whatever you like.   The canned mushrooms where a bit bland...I must say but it worked.

Thanks for this I love mushroom soup whether it is turkish or not, and I will be making it tomorrow as I have the day off and now feel like doing a little cooking , I am also going to bake a cake lol...How cool am I simple pleasures ehhh

 Do you have dried mushrooms in your area? They are excellent for making soup.  Each mushroom has it´s own unique flavor.  I like shiitake mushrooms because they are very flavorful and has great health properties also.  In fact, many mushrooms have healthful properties.

 

I have them several times a week. 

 

Here is something I do with them maybe you would like to try.  It´s a vegetarian dish.

 

Take the stem off the mushroom so as to make a nice bowl for stuffing.

 

Grind up sunflower seeds, pumpkin seeds, garbanzo beans, mushroom stems.

Add some bread crumbs and mix them all together.

You might want to add a little water or liquid to make the mixture more easily worked.

Add a little butter to the tops of each mushroom.

 

Stuff the mushroom caps, add a little water to the baking pan and cover.

Bake in the oven for about half an hour. Take cover off the last 10 minutes of baking.  You may want to then put them in the broiler to crisp the top.
