Güveç is a Turkish dish made of meat and vegetables and baked in a clay pot. The secret to preparing güveç is the slow cooking in the closed pot, which brings out the flavors of all the ingredients. The meat, vegetables and spices are mixed together and placed in the pot, which is then covered with a pottery lid. Traditionally güveç is baked in a pit oven, "tandýr", but today a regular, modern oven works as well.
This güveç was prepared in a special way: clay pot with ingradients has been closed by dough and then baked in the oven (I´m not sure, however, if it was exactly traditional "tandýr", pit oven, or a modern one). So when the güveç was ready for eating, we had to cut the bread at the top of the clay to be able to open it :) Anyway, no matter of "tandýr" being traditional of modern, güveç was absolutely delicious!
