I guess subject (olmaz dediklerinin hepsi) is clear and the predicate olmaz is in the end. But what is the syntactic position of

bak|tık|ları|n|ın = stem + participle + poss pl 3^rd + -n- + gen

and what is ise ‘if’ doing here?

There are two predicates that means there are two subjects. 

First subject is clear as you said. But what is the second subject? There are two options:

1)It is "(senin) olur gözüyle baktıkların" So there is no need for a connection suffix after baktıkların ın   

2)It is "(senin) olur gözüyle baktıklarının hepsi". There must be "hepsi" after "baktıklarının".

You asked what "ise" doing there. "ise" is not "if" there, it is "as for" If you think like that it makes sense.

I am not sure but I guess if "ise" comes after a noun it gains "as for" meaning.

olmaz dediklerinin hepsi- all the things you think that are impossible

olur- become (possible)

olur gözüyle baktıkların ise- and those you think that are possible

olmaz - become (impossible)
