whatever tin you want to use, make enough mix so that it fills it 3/4 of the way up to allow 1/4 for rising. if you use middle of your oven, on about gas 3/4.. quite low, as you dont want tit to cook too quickly. should take 20-30 mins. to tell if cooked, press sponge in middle, if it springs back up as if you didnt press it then its done. i am a chef... this is a recipe all out kitchens use!

Canli,
I hope I can help you with this.

Chocolate Cherry and Almond Cake

Ingredients

SPONGE CAKE:

1/2 cup all-purpose flour (118 ml)
1/4 cup unsweetened cocoa powder (59ml)
1 teaspoon baking powder (5ml)
4 eggs, separated
1/2 cup sugar (118ml)
1/4 cup skim milk (59ml)
Olive oil cooking spray

FILLING:

1 tablespoon unsweetened cocoa powder (15ml)
2 tablespoons cornstarch (30ml)
1 1/2 cups skim milk (295ml)
1/8 teaspoon almond extract (0,6ml)
1 cup fresh or frozen pitted dark sweet cherries
(236ml) (if unavailable, canned sweet cherries may be used)
1 packet NutraSweet
1 teaspoon pure maple syrup (5ml)
2 tablespoons slivered almonds (30ml)

GARNISH:

1 tablespoon confectioners' sugar
5 cherries, cut in half

Now Cook

The Sponge Cake: Preheat the oven to 375F.(190C).
Sift the flour, cocoa and baking powder into medium-sized bowl, and set aside.

In a large bowl over warm water, beat the egg yolks and sugar until the volume doubles - approximately 5 minutes. Add the milk and sifted flour mixture and mix at low speed with an electric mixer until well incorporeted.

Clean and dry the mixer beaters. In a medium-sized bowl, beat the egg whites at high speed until stiff but not dry. Fold the egg whites into the batter mixture.

Poor the batter into lightly greased 9-inch (23 cm) round cake pan. I like to use the spray-tipe olive oils, ensuring the minimum added fat.
Tap the filled pan on the counter to release any trapped air bubbles. Bake the cake for 20 minutes and turn out to cool on a rack.

The Filling: Combine cocoa, cornstarch and 1/4 cup (59ml) of the skim milk to make a paste.

In a medium-sized sausepan, bring the remaining milk just to boil, stirring constantly to prevent scorching. Stir in the cocoa paste and remove from the heat. Stir in the almond extract, cherries, NutraSweet, maple syrup and almonds.

To Asssamble: Slice the cake horizontally into 2 even layers. Place one layer on a serving plate and spread with the filling. Cover with the second cake layer. Garnish with a sprinkle of confectioners' sugar and the cherry halves.

"Happy Birthday" - to whom it may concern

for inside you can put strawberry jam amd cream, or a butter cream which will last longer which is butter and icing sugar beaten together. for the top you could simply dust with icing sugar and decorate with strawberries

Anyone knows how do we make those small sugar flowers which we use them to decorate the cake ?
And how do we colour them using natural things ?

The easiest way: take some rahat-lokum and powdered sugar, make a "dough" of it, spread it with roller (as thin as possible) and cut out petals, leaves etc. Then you join them into flowers and give them the shape you want. But I cannot help much about colours... You can use few drops of some fruit syrup, but you can gain only a few colours that way. I use artificial colours, I admit.

Fruit juice is the best natural colourant for a cake. There are better dyes, but they are usually vegetable dyes so wont taste good with a sweet cake. Remember to use INSTEAD of water in the icing, otherwise you will make the icing too thin.

Real cochineal is natural, but made from crushed cochineal insects....

Omg,i guess i will ruin it,i'm not a sweet's expert !

Ok,there is the topping,can be cream,and sometimes,its a bit hard surface sugar sweet,and a bit shiny.

What is this ? :-S sugar and butter too ?

İs this what you meant by icing and water incuded ?

INGREDIENTS
1 cup shortening
1/2 teaspoon salt
1 1/2 teaspoons clear imitation vanilla extract
1/4 teaspoon almond extract
1/2 cup water
8 cups sifted confectioners' sugar
DIRECTIONS
Mix shortening, water, vanilla, almond extract, and half of the powdered sugar with a mixer for 5-10 minutes. (it's very important to mix this long)
Add the rest of the powdered sugar and beat just enough to mix in.
Add additional water for desired consistency

I think this link might help you in your search. It is a great website to use and you can search dishes from around the world.

I have to admit I have never used it though because I have my own cooking skills that I am very proud of (ineheritance mainly - Uncle Can was a chef...mother great cook along with many members of my dads side of the family)

Nevertheless my friend always uses it to help her, and her puddings always turn out very nice, and makes cooking for her "a piece of cake"

Hope this helps
P.S. sorry for the lame joke lol.

Tarhana in Turkish, trachanas in Greek , kishk in Egypt, or kushuk in Iraq are dried foods based on a fermented mixture of grain and yoghurt or fermented milk

İ just want to know how do we make that mixure which we let it dry for a week .

Smith Island 10-Layer Cake
A Recipe for the island's specialty
Smith Island's cooks all add their own touches and no one knows who invented the cake, but it's been an island standby for generations.

Photo: ©Ferne Arfin 2006 Reprint Request
We finish by polishing off thick slabs of Smith Island cake which, depending upon who's doing the baking, ranges from seven to ten layers of white cake and thick chocolate frosting.
CAKE
INGREDIENTS:

2 boxes yellow cake mix
2 sticks butter (not margarine)
8 eggs
12 ounces evaporated milk
1.5 cups whole milk
2 tsp vanilla

METHOD
Preheat oven to 350°. Grease and flour as many 9" cake pans as you can fit in your oven at one time. Mix evaporated milk and enough of the whole milk to equal 2.75 cups. Put cake mix, eggs, butter, vanilla and half the milk/evaporated milk mix into mixing bowl. Stir to blend then mix on low speed for about 5 minutes. Add the remaining milk and continue mixing on medium speed for 10 minutes, until the batter forms a ribbon.
Spread about 8 to 10 tablespoons of batter into each prepared pan. The batter should be about a half inch deep. Bake for 8 to 10 minutes, until the layer is slightly browned and pulls away from sides. Repeat until you've used all the batter. You should end up with between 8 and 10 layers.
FROSTING
INGREDIENTS

2 sticks butter
24 ounces evaporated milk
8 tbsp unsweetened cocoa powder
2 lbs confectioners sugar

METHOD
Melt butter and allow to cool slightly, then mix in the evaporated milk. Gradually, beat in the cocoa. Cook over low heat for about 10 minutes being very careful not to boil or scorch.Off the heat, slowly beat in the confectioners sugar. Cook over very low heat, stirring constantly, until thick enough to coat a spoon and form a ribbon. Allow to cool.
ASSEMBLY
Spread a thin layer of frosting on each layer and stack up, making sure to leave enough frosting to thickly coat the top and sides of the assembled cake.
Allow the cake to settle for a few hours before slicing. VARIATIONS
Smith Islanders are noted for their sweet tooths. Some island ladies use bananas mashed with icing sugar, or strawberry jam between the layers. Some have been known to crush their favorite candy bars and sprinkle the crushed candy on the layers.

İts not actually urgent, but its driving me crazy
İ have this and looks lovelyyy, ama i want it to fit to 16 cm pan not 20-23 cm
Fruit Tart
Ingredients amount would be impossible if i used math to calculate it
İ mean for 16 cm i would actually need 168 grams of flour
So does anyone has another one which can fit in smaller pan with logical amouts of ingredients?!

If you want to make it easy and just for at home, I suggest you make a Victoria Sandwich cake and instead of Strawberry jam, make fresh Raspberry jam. The cake is very easy to make and I find it absolutely delicious.

I suppose you know how to make jam, but in case you dont here is 'my' basic recipe:

- Clean the fruits from all you dont want in your cake, like seeds or anything
- Clean them if necessary
- Put the fruits into a large cooking pot and slowly bring to a boil
- Once the fruit starts 'boiling' in the pan, add the sugar (lets say 800 grams for 1 kilo of fruit)
- Wait till it boils again
- With a spoon take off the white foam and you can bottle in clean bottles

Here´s an apple pie like the one my mum makes:

The recipe goes:

Dough:
250 g of baking butter/margarine
600 g of flour
250 g of sugar
6 egg yolks
3 tablespoons of sour cream (creme fraiche will do too)
2 teaspoons of baking powder

Apple stuffing:
1 kg of apples
1 tablespoon of sugar
1 goosebery jelly powder (custard powder will do too or anything like that)

Knead the dough, divide into 2 halves. Use a rolling pin on both parts, put one on the bottom of baking tin (previously rub some margarine into the tin and put some flour on it), then add the apple stuffing, then the remaining dough.

Apple stuffing:

grate the apples, fry them a bit with sugar, then add the jelly powder and stir. Bake 45min at 160 degrees
