As ´bilemezsin´ translates as ´I can´t know´ then surely a better ´artistic appreciation´ would be ´what can you know?´ not ´what do you know?´- this gives a slightly different feeling to the poem.

I think it should be ´what do you know´. The literal translation is ´you cannot know´, but the implication it gives is like ´you cannot know for you have not experienced´. When you say ´what do you know´, for me it implies ´you have not experienced it, so what are you talking of?´, whereas ´what can you know´ to me sounds like ´nobody is able to know´.
When you say ´sen bilemezsin´ to someone (out of context), you generally mean ´you wouldn´t know´.

My try for the second part;
Sen bilemezsin yalnızlığı... Hiç ses duymadığın bir yalnızlık yasadın mı? sen kaç yalnızlığa dost oldun.. kaç saat dayanabildin ona.. yüzüne kaç kapı kapayıp kaçtın yalnızlıkların...?
What do you know about loneliness
Have you ever lived a loneliness which hasn´t heard any sound ?
How many lonelinesses have you been befriended
How many hours were you able to stand it
How many doors closed in your face before you escaped from lonelinesses..?
Second sentence: Have you ever lived (experienced) a loneliness in which you didn´t hear a sound=
And I don´t get the last sentence. ´kapayıp kaçtın´ belongs together, so it cannot be ´how many doors closed to your face´, and to ´escape from´ needs ´-den kaçmak´, could somebody explain this sentence? Seems as if something´s missing?

yüzüne kaç kapı kapatıp kaçtın yalnızlıkların
Bence kapatıp olması gerekiyordu.
I don´t know about the rest, it was pretty hard.

Sen bilemezsin içmeyi... Şişenin dibini bulduğun an midir sana göre içmek? Sen kaç kez,şarap tadında buruk şarkılar söyledin.. kaç saat dayanabildin sarhoşluğuna.. Kadehini aklındakilerle mi yoksa yüreğindekilerle mi içtin...?
What do you know about drinking ?
Is drinking according to you the moment you have found the bottom of the bottle ?
How many times did you sing astringent songs at the taste of wine
How many hours were you able to stand your drunkness
Did you drink the wineglasses with the things on your mind or the things in your heart

No, ´kapayıp´ is correct too and comes from ´kapamak´, also meaning ´to close´ or ´to shut´
