We are having spaghetti bolognese tonight! We alternate our meals!
We had mucver, pilau, salata, borulyce and ekmek of course on our last Turkish meal!

This is mussaka



In the standard (3-layer) Greek recipe, the bottom layer consists of aubergine slices sautéed in olive oil, the middle layer is ground lamb cooked with mashed tomatoes, and the top layer is béchamel sauce (probably introduced by Tselementes in the 1920s).

There are variations on this basic recipe, sometimes with no sauce, sometimes with other vegetables. The most common variant in Greece may include zucchini (UK courgette), potatoes or mushrooms in addition to the aubergine.

Is mussaka originally Turkish or Greek? I ate it first time in Greece, but they have it in Türkiye too.. so.. (just to avoid another origine-convresation with my beloved )

But it takes so much time to be prepared and it brings such a mess in the kitchen that I avoid it usually, although it's my daughter's favorite dish :-S

We make same too,rice,vegetables'carrot,grean beans,green pepper,are my favorite,and minced beaf mean 'i prefer beaf' then we cover them with bachmel sauce

İt be yummy too,i love it and macaroni and minced meat with bachmel as well

Well I've had a long day at work - then discovered a broken mug in the road outside my house......unfortunately I discovered it by driving over it and ripping a hole in the tyre!!!

So I haven't been bothered to cook......
Bought a big bag of chips for FlossDog and myself to share - so we had chip butties together

Then I had a sucuk sandwich - no way FlossDog is getting sucuk

I was eating carrots all day yesterday and I have to eat that disgusting vegetable soup today (i didn't burn it btw ) and you offer me these?

Canli, here is
KEBAB WITH EGGPLANT - Patlicanli Kebab
5 Servings
1 kilo lamb meat
2 glasses of water
2 onions
2 soup spoons butter
2 tomatoes (or 1/2 coffee cup tomato sauce)
4 small eggplants
salt, pepper

Peel and cut the eggplants lengthwise into 4 pieces, then each quarter in 3 cm. long pieces. Soak the eggplant pieces in well salted water for 1/2 hour. Then squeeze them and fry them in a frying pan where the butter and some oil have been heated. Remove them from the frying pan and put aside.

Then, in the same frying pan, partially cook the meat for 3 or 4 minutes, then put it all in a saucepan where the kebab will be cooked. In the frying pan, brown the onion that has been halved and cut into fine slices. Add the peeled, diced tomatoes (or the tomato sauce diluted in a half glass of water). Stir for one minute. Add a coffee spoon of pepper, a soup spoon of salt, 2 glasses of hot water, the tomatoes and onions to the meat in the saucepan. Cook for about 1 and 1/2 hours until the meat becomes soft. Add the previously cooked eggplant to the saucepan and cook 30 to 40 minutes more.

Ive never cooked turkish food at home although I love it and thought it was about time to give it a try. I have some recipes and would like to know what sort of glass we are talking about when recipe says '1 (or 2 or 3) glasses of water (or meat stock or whatever). Pint glasses? wine glasses? tea glasses? - could someone please tell me.

hhhmmmm I am struggling what to have for iftar, it is either tavuk güveç or köfte (halal meat of course!) I might go with the köfte and maybe add some dolma as a side dish and I might just invite my good friend Musti to join me. seeing as I know him so well and I know we like the same foods. Day is finished,so im having now,
Creamy Tomato Basil Soup.
So lovely,specially when weather is cold.
Serving 4,

INGREDIENTS

4 tomatoes - peeled, seeded and diced
4 cups tomato juice
14 leaves fresh basil
1 cup heavy whipping cream
1/2 cup butter
salt and pepper to taste


DIRECTIONS

-Place tomatoes and juice in a stock pot over medium heat. Simmer for 30 minutes. Puree the tomato mixture along with the basil leaves, and return the puree to the stock pot.

-Place the pot over medium heat, and stir in the heavy cream and butter. Season with salt and pepper. Heat, stirring until the butter is melted. Do not boil.

And you would find many nice recipes too in arabic if you like.

Btw,i dont use potato at the bottom of the pan,i use onion and carrot,and tomato slides,and green peper if it wasnt included in the dolma and i dont use tomato paste,i use all fresh tomato.

As for Turkish,they almost make it same,but they use Zeytin sağ,olive oil

DOLMAS! my kaynana makes the best! She and her husband work together to make them. They are not too oily (like the neighbors). She also adds something red to it, maybe it is a touch of tomato paste? I think she said kirmizi biber...just a touch....really great! I stuffed my self full of them last time I was there! Dolmayim (can I say that?) ben dolma gibi...maybe!

Noone ever can make any kind of DOLMA and SARMA like the woman makes in CANDELA GARDEN in Cihangir... better than my mom does, i have to be objective!

İts red pepper.
Actually,you can add what ever you like from spices,bahar,Dolma love bahar,but the trick is,you taste it before adding another one,or before adding more,so you would know what does it needs and at same time if you put some kinds of bahar together it would taste strange.

And NO Aenigma,i dont love food,however i've a good taste in food lol

Btw,i dont use potato at the bottom of the pan,i use onion and carrot,and tomato slides,and green peper if it wasnt included in the dolma and i dont use tomato paste,i use all fresh tomato.

As for Turkish,they almost make it same,but they use Zeytin sağ,olive oil

No not for that, but since I returned from Turkey I´ve been perfecting my pilav skills.  I quite like a mixture of 2 prts rice and 2 parts bulgar.  I then toss anything in that I like . . . fresh parsley, coriander, onion, a little red and/or green pepper (the naughty ones as my friend calls them), bell peppers, salt, black pepper . . . . and so on

 

Oh I don´t think I should be talking about food at this moment, it´s making me hungry!!!!

 Neither did I     I decided to experiment.  Actually I didn´t give the right amounts . . . I meant to type 2 parts rice and 1 part bulgar (not 2 parts bulgar).  I fried the chopped onion before adding the rice.  I hate raw onion but love it cooked.

 

When cooking very large amounts of pilav a friend (Iraqi) of mine covers the bottom of the pan with sliced potatoes, to prevent the rice sticking/burning.  These potatoes are delicious too

I just had the most delicious German hering salad, ingredients: finely chopped sour hering pieces, very small pieces of cooked potatoes, sweet dill pickles and pickled red beets, fresh onion, all finely chopped. Add a bit boullion, lemon and very little oil.

 You´re welcome.  Those vegetables you don´t eat would form the basis of a nice soup if you blended them

 I mostly liked the last part But the meal was prepared fast, so Im happy! The thing I hate most is that preparing it takes me so long But now I just buy lots of minced meat and prepare the köfte all at once and put it in the freezer in 1 person portions Cool

Couldn´t decide whether to fry an egg or heat up some lentil soup I had left. Finally I heat up the soup in a small frying pan and then broke an egg above it

 

Tonight I´ll probably have some Chinese take out. Has been a looooong time!

 Who cares Its called Fusion Cooking See it even has a name What is also nice, kuru fasulye with bacon You make dessert from chicken breast and flowers, why not put an egg in soup (which, by the way, is a common thing to do, only the egg is put in stirring so it only leaves small parts for structure. I learnt this from a mother of a friend, I forgot the name of the soup but it contained potatoes and meatballs rolled in flour )

 

And besides, I make real good Mercimek Çorbası
