Spinach (Turkish Style)

16oz of frozen spinach
2 Tablespoons of butter
1 medium onion
1/2 cup Feta Cheese
4 eggs
Salt & Pepper to taste
Sautee Onions in butter until tender. Add spinach, salt and pepper. Cover and cook until spinach is completely thawed and hot. Drain excess fluid. Add Feta Cheese and mix well. (Mixture should be at least 1 inch deep and take up the entire bottom of the pan. If not, you may need to transfer it to a smaller saucepan) Make 4 depressions in the spinach mix. Crack open eggs and pour into the depressions. Cover and cook until eggs are cooked they way you like.
I like the yokes completely cooked - my husband likes them over easy style. You can also use fresh spinach for this, but I like to use the frozen as a time saver.
