Chicken in Tomato Sauce

A good friend of ours made this for us when we were last in Izmir. She doesn't have any measurements and just makes it by taste and smell. It took me a few tries to get it exactly right.

Here was my best attempt:

2 pounds of chicken (either in parts or cut into pieces)
olive oil
4-6 medium sized tomatoes diced
1 tablespoon of tomato paste
2 green peppers diced
1 large onion chopped
4 garlic cloves chopped very fine
1 tablespoons of Red Pepper (if you like it hotter, add more)
Salt and black pepper to taste

Coat the bottom of your saucepan with olive oil and sautee your peppers and onions. Brown the chicken and then add the tomatoes and tomato paste with a cup of water. Add red pepper, salt and black pepper. Cover and let it simmer for about one hour.

Personnally, I prefer to use chicken that is still on the bone, because it comes out much more tender and juicy. If you just use boneless chicken, it can be a little dry.

Would be my pleasure. We actually do catering from out of our home at times (my side business)...but I think it would be a bit cold by the time it got to the Netherlands. Maybe I should just open a bed and breakfast in Turkey and be done with it!! You can all visit me on your vacations.
