Not even every professional bakery can make simit.
Simit, as it would be sold in Istanbul streets, require an oven with certain special characteristics (you cant make simit in an oven designed for baking bread)
There are however variations to Istanbul simit, and you may get a somewhat different but still delicious simit version with anyone of these recipies.

Quoting Roswitha: Grandma's Simit
1 1/2 cup milk
1/2 cup Water
1/2 cup sugar
1/2 cup butter
2 eggs (optional)
2 tsp. salt
1 yeast cake
9 cups (white) flour
Make the dough, shape any way desired. (Brush with beaten egg) optional. sprinkle with sesame seeds. Let rise for 30 minutes. Bake 400 degree Fahrenheit in oven for 30 minutes.

What measurement is a yeast cake Roswitha?
I always find fresh yeast is better than fried but it is getting harder and harder to get. I used to get it from a local family bakery but it's now been taken over by a small factory based bakery. No other family bakers left in my town
