I have a great recipe for the eggplant and yogurt portion of this Turkish dish. I tried to make the meat portion of it this weekend but it was a little tasteless. Does anyone know how to make just the meat portion?

For those of you who don't know what this dish is...it is a three layered dish. The bottom is pureed grilled eggplant (sometimes called Sultan's Delight), the middle layer is a yogurt/garlic sauce and the top is supposed to be a spicey chopped lamb mixture. The dish is absolutely fabulous. I have had it several times at my favorite Turkish restaurant but no matter how much I beg, they won't tell me how to make it!! I have looked on the internet and found a few recipes but they seem a little bland too...HELP!!

well..I cant say that I am an expert on ali nazik, but i searched for you on the net..and it looks very simple :

-Chop the onion, and 2 green pappers, saute them in a deep pan with 2 tablespoons of olive oil. Add the ground beef, and stir until cooked.
-Sauté the minced meat in 2 tablespoons of oil and pour it on top of the mixture.
-Put the ground beef, salt and pepper in a pot and cook over medium heat. While it's cooking, stir and break the large pieces with a wooden spoon. Cook until all the water evaporates.
-Brown the meat in butter. Drain.

I thought it was made with meat in the shape of kuşbaşı and not minced?

And as far as I know they grill or bbq it, so you never get the same taste at home, unless you ofcourse bbq it when its nice weather!

But I agree, its a great dish!!

The one I was talking about is a minced meat..similar to what handsom posted...but I was wondering if there was some secret ingredient because the one I had was a little spicey. I just can't put my finger on the spice they added. Anyway...I will keep playing around with it. When I get it right you can all come for dinner..OK?

You could try some kırmızı pul biber, isot, parsley oregano and garlic?

Elisabeth, I made Ali Nazik with a friend yesterday, and the meat was really tasteful. Here is the recipe:

The patlıcan-yoğurt mixture:

01. Wash the aubergines and some green peppers (hot green peppers if you prefer spicy, or just çarliston biberi, like paprika if yu dont want it hot)
02. Cook them all soft in any way you like (in an electronic pizza pan, in the oven), the inside has to become all cooked and soft, the skin can be burned.
03. Peel the skin off the aubergines, take out the seeds of the green peppers, and cut into small pieces.
04. Crush 3 or 4 cloves of garlic and mix with a large amount of süzme yoğurt.
05. Mix the vegetable mix with the yogurt-garlic-mixture.

The meat-tomatosauce:

01. Cut an onion and fry in a pan with olive oil
02. Once they become a bit transparant, add the mincedmeat.
03. Clean 2 tomatoes and grate them
03. Stir untill the mincedmeat is all brown and add the tomatoes
04. Stir in 2 tablespoons of domates or biber salça (again, depending on if you like it spicy or not)
05. When the meat is cooked, add salt, pepper, kırmızı pul biber, mint (if you like, i dont!), and a little bit of oregano.

When adding the herbs, be careful not to put too much of the mint and the oregano, as it can start to 'rule' the taste..

I suggest you first make the meat tomato sauce before mixing the yogurt with the hot patlıcan, otherwie that will be all cold by the time your meat is fully prepared!

Place some slices of thin turkish bread on a plate, over it the yogurt mixture and on top of that the meat. Serve with some vegetables, as green peppers and tomatoes.

Enjoy
