Anlamak: to understand
-um is the ending for I
Anlıyorum: I understand
-sun is the ending for you
Anlıyorsun
the -m- bit in the middle is negative
So anla-mı-yor-sun is you do not understand.
Anlamak istemiyorsun
Same logic, but with the verb istemek - to want
You do not want to understand
