How do I say this?
Can I use yorgun düşmek ?
If I do, will I say yorgun düşiyorum ? I have a feeling the answer will be no . . .

Only learning so beware but I always thought it was
ben çok yorgunum

you can use yorgun düşmek, but never in the present tense.. It usually refers to past, so you say yorgun düştum..
by the way, if you wanted to use it in present countinous tense, you would be saying "yorgun düşüyorum.
