you must try the anatolian restaurant its on istiklal street in taksim, also look into cicek pasaj, both on the right as you walk down from taksim square, also take a trip over the bosphorus and visit boazagi university, sultanhamet topkapi sayri and mavi cami are musts.
the church of haghia sophia,325 a.d. , the grand bazaar is huge, it is only closed on sunday,
dolmabahce palace 9-4 monday to thursday
there are ferry tours of the bosphorus three times a day from eminonu
look out for the madens tower in the middle of the river you may remember it from a james bond film

I just went to istanbul in april and i recommend visitng topkapi sarayi, domlabache, yerebatan saranci and the hagia sophia. Also you should stop by Akmerkez if you want to look at really nice shops. I lived close to bagadat so we would go shopping down the bagadat caddesi alot and i would recommend Marks and Spencer for shopping and to have lunch at Divan or Respuesta. I would also recommend staying at the Swissotel next to dolmabache; its superb. I hope you really enjoy your trip!

Yep, if you have money.

I'd recommand you to stay in Çırağan Palace Hotel.
