How do you know when do you have to say "seni" and when do you have to say "sana"?

It all depends on the verb you use, and whether it needs an accusative suffix or a dative suffix. Most good dictionaries will indicate this before the verb, eg

/i sevmek

Seni seviyorum.

/a gelmek, /dan gelmek

Sana geleceğim. (I will come to you)

İstanbul´dan mı geldin? (Is it Istanbul you came from?)

/dan korkmak

Senden korkuyorum. (I´m afraid of you)

sen+i(accusative)------------------>seni (you (ac.))

sen+e(dative)---------------------->sana (to you)

"sana" and "bana" are the biggest exceptions for the major vowel harmony.

 

Seni bilgilendirmek istedim. (I wanted to inform you.)

/Sana haber vermek istedim. (direct: I wanted to give news to you.)

 

Sana inanmıyorum!!! (I don´t believe in you. (direct: I don´t believe to you))

Sana güveniyorum. (I trust you.)

Seni kabul etmeyecekler. (THey won´t accept you.)

Seni getirmezlerse büyük bir hata yaparlar. (They make a big mistake if they don´t bring you.)

Seni istiyorum ben! (I want "you"!)

Sana bir şey söyleyeceğim. (I will say you something.) (direct: I will say to you.)

Sana sormazsam rahat edemeyeceğim. (I won´t be able to relax if I don´t ask you.) (direct: ..ask to you)

Sana yetişemiyorum, yavaş yürü!!! (I can´t reach you, walk slowly!!!)
