can someone break down these two sentences for me? Like the suffixes. Why does it say "yor suffix and then olman" what does the olman mean. Why can´t you say "olacağını" instead

It is because "olman" refers  the present  

In your sentences, the statements are about present time 

The fact of your thinkING like this

The fact of your sayING  like this

Do you mean "you´re thinking" by "your thinking"?

Other alternatives:

That you think like this doesn´t mean it´ll be so

or

It doesn´t have to be like that just because you think so.

"Your thinking" is more literal translation in order to show how should be understood when breakdown the Turkish sentence.
