In my opinion, wedding is not the biggest problem. Think more about your future life, eg. children. Do you want your son to be circumcised? Does your love mind if your children is beptised? Will your children able to choose their religion later, and do you mind if they choose Islam?
For me, choose both catholic wedding and Turkish wedding. Turkish weddings are great - especially if family gives you lots of gold

And the period of viza you can get on the airport depends on the country you come from: for some countries eg. Ukraine is about 2 weeks, for Poland is one month, for USA is three months.

Generally you should apply to a Turkish Embassy, show your material sources in order to prove that you will be able to live in Turkey for a period of time you want to stay. If you have a job, you will have to prsent you salary or to show your bank account's statement. If you are a student, it can be money on your account or some scholarschip. Or you can submit an invitation from sb who lives in Turkey - generally this is the easiest way, but to get invitation the person who invites you has to fullfill some conditions, eg ear enough money to support you and has to have a house etc
