I am made chicken stew with shiitake mushrooms and celeriac. I am now boiling the bones and none choice parts to make stock.  It will be a few hours more or less.

 

It has a whole chicken in it, some onion, garlic one celeriac root and shiitake mushrooms.  The boned chicken went into the stew for now, and I have boned the chicken already and put meat away in the freezer for later.  The  meat will be saved for other things. Maybe chicken salad. 

 

It should be possible to get a couple more quarts to freeze for later use.  It´s always good to have chicken stock ready, particularly for flu or colds. 

 

..........and yes, I have been growing my own mushrooms....yum....yum

Made some stuffed peppers this weekend.  Stuffed them with lamb, rice, fresh herbs and spices, all smothered in a fresh tomato sauce....can´t wait to have left overs for lunch!

yameeeeeeeeeeee! love them!

 

many people stuff them with cooked meat and rice. and I do with raw.

yum...sounds delicious.

 

Do you have mini peppers there? Trader Joes has beautiful red and yellos mini peppers.  I like to stuff them with ground turkey or chicken. I blend quinoa with the ground meat. It´s not quite Turkish, but it is low fat and the quinoa adds a nice texture.  A little fresh dill is nice with them.
