If eating it makes someone a Turk, you can eat it and be a Turk. I am happy with the way I am now.

Şırdan is made neither with penis nor intestine.   It is made with abomasum which is one of the 4 compartments  of the sheep stomach.

rumen  (işkembe),

reticulum (börkenek),

omasum (kırkbayır),

abomasum (şırdan, şirden)

And in Turkish, this part is named Şırdan. The meal which is cooked with this part is named with the same name.

Does eating it make someone Turk?
