Put the fish whole on a tray in the oven.

Add slices of onion, thick slices of tomato, olives, thick slices of lemon and lots of fresh parsley leaves. Drizzle over plenty of olive oil. Add salt and pepper to taste.

Bake for about an hour in a hottish oven (about 200 degrees). At the half way stage you may want to turn the fish over. Serve with green salad.

PS You don't need to chop the head off, or fillet the fish. Your Turkish dinner guests will be used to knowing what to do. Just don't serve the cooked lemon chunks, all of the rest can go on the plate.

This is so easy and really healthy.

Quoting SillyYak:

Anyone out there tell me the Turkish words for:
Incense
Spice/Spices
Herb/Herbs

I'd be very grateful. Thanks, sorry for banging on.

Incidentally, the alphabetical list of herbs and spices was so useful i've put on 2 Coeliac message boards for the UK and Bulgaria. VERY useful for us.

Thanks again everyone.

Incense: tütsü
Spices: Baharatlar

Herbs is more difficult. For herbs that heal, use şifalı bitkiler. For herbs that add flavour, Turkish doesnt really make a difference from spices.

Ayla I agree, my guess was Ankarada too - and you are always really good at the "correct the typo" guesses!

The sky is not black. Everywhere it is full of stars and the dazzling light from these sparkles brightly on the snow white covering of the mountain. You think that you have never come across such a bright darkness. In such weather you can walk as much as you wish in the mountains, as you can find your way easily by distant mountaintops. And if the moon is up you will think you are in daylight, as your shadow falls on the snow.
It became time to retreat to the tent. You may have climbed into your warm sleeping bag, but you haven't yet finished with the snow. You crawl out of the sleeping bag as far as your waist, and from the open inner door of the tent you get the clean snow you collected recently, and manage to throw it into the pan which is over the moaning fire. In actual fact on the mountain, snow means life. You obtain the water for the tea and coffee you drink from snow. Obtaining this water is amazingly peaceful. It is almost a treatment for people who have become used yto living quickly and efficiently in towns.
