well paca can be done with lambs head as well..and it is called 'kelle paca'-lambs head soup-..

I've had Turkish tripe soup several different ways. Which one do you like. One was white with a LOT of garlic vinegar and mint and yougurt, the other was red with a LOT of garlic and chilli.

I love eating it, but not making it. You have to not plan on being very sociable for a while after eating it...

If you eat parsley after the chlorophyll will combat the odor.

I could tell sme funny lambs head stories....I actually have cooked lambs head a few times. Can't say it's something I really relish eating though. It is a very existential experience.

Let me get one thing straight.... you actually cook lamb's head ?
İ mean you have the lamb's head in tencere?!
or you mean you cook lamb's head meat ?
Same question is for the soup i guess :-S

In my case the lambs head was cut in half...(that was not a pretty sight)...It was then put in a roasting pan and baked on a bed of cordone with some lemon over all...and garlic, of course.

yes, you put the head as a whole into tencere or you can do it in the oven as well..

I am on Canlis side
I am squeamish and could not even cook a lamb's/sheep's head, never mind EAT it. Yuk yuk and double yuk, blaaah, blaah blaah blaaaaaaaaaaaaaah.

As for tripe, it was very popular when my mother was young. I think it was boiled and eaten with onions. I think vinegar could be added. About 30 years ago I had a dog and we used to give it to him, he loved it.

Thank you Canli for posting the recipes. I love rice dishes and on my last trip to Istanbul my friends cooked some great stuffed peppers . . . scrumdiddlyumptious!!

p.s. I am sure there has just been an earth tremor here in the north west of england. I'm serious, , ,

Now,i've noticed most meals prepared with lamb meat.
So when we are in restaurant,
First how can we tell if its lamb meats or not,will it be written in the menu ?
Second can we order it with beaf not lamb ?

Do you mean stories about funny lamb's heads or funny stories about lamb's heads. Funny? yuk, yuk , yuk Alameda . . . I don't have the stomach for tripe either sorry to be a wimp.

I believe jellied eels are a delicacy in the East End of London. yuk

When I was a girl, tongue (cow's I think) was very popular. My mum used to get it cooked, pressed and sliced and as a young child I never realised what it was, even though it was referred to as tongue. We ate it cold with salad or on sandwiches. Of course the day I saw a raw tongue in the butchers was the day I signed the pledge! Crumbs . . . those cows have long tongues.

We used to eat ox tail soup too.

ahh those were the days . . .

You DID! that caught my eye...and it's on the news now. So welcome to the club. The news said they are rare in England.

That's a respectable earthquake. Certainly enough to be felt. You are lucky nobody was hurt. You don't build or prepare for them like we do here.
