1 eggplant
1 courgette
2 patatoes
6 green peppers
3 tomatoes
1.5 glass of olive oil
salt
3 gloves of garlic

clean all the vegetables, peel the cover of eggplants( with stripes) and courgette, patatoes. Put them in a cup of salty water. Start frying with patatoes, courgette, eggplant and peppers in order. Dont forget dry them before fryingPut them on a napkin so extra oil would go. Grate the tomatoes put it on the pan with your leftover frying oil, add salt. Cook for 15 min. Take vegetables on a serving plate, add the sauce, bon apetite!

For lighter addition,

Put 100 ml. olive oil in a pot. Add eggplants, courgette, patatoes, pepper, grated tomatoes, garlic and salt in order. Close the lid, cook it in low glow for 45 min. you may serve it hot also cold.(this is healtier and easier to make)

Yes one of mine too But I have a question: the patlıcan season in Turkey isnt that good this year, and besides that,in most supermarkets they are sold in enormous sizes: it takes ages and lots of oil to fry them enough till they are soft. It is also possible to cut the patlıcan and kabak in smaller pieces, right? That wouldn't ruin the taste, would it? So far, all the things I tried with patlıcan, which is my favourite, have tasted great, but on the two edges always were still hard

One question though: how do you cut the veggies? Küp şeklinde, halka halka yada dilim dilim?

I see that you have a problem where to put the "mı, mi" in questions. You should study it

"Acaba, tekrar Hollandalı mı oldum yoksa erkeklerle çok zaman mı geçiriyorum?"

Evet, dikkat etmelisin. Çünkü erkekler kendi aralarında gerçekten çok küfürlü ve argo konuşurlar. Onların türkçesini örnek almamalısın.

Aslı, as I am not a great cooking expert and dont really know measurements, could you please write in all your recipes for how many persons approximately is?

I usually cook for 3, so it would be nice if i could changew the measurements according to that

If you're cooking for 3 people, I'd definitely multiply it by 2, or maybe 3 to be sure. Are you guys big eaters? It depends on that too..
Better too much than not enough, and you'll be more than happy with leftover kızartma

Thanks Elisa. Yesterday I made something similar (but not the same), but I replaced the potatoes with onions, according to what I had in the house. Next to it a white pilav and yoghurt is really nice. Next time i will add kemikli et!

Yep. It gives a great taste to the food. Just like when you make your own soup (if it contains meat ofcourse ) you add meat that is still on the bones. You can either take the bones away after your dinner is cooked (usually the meet becomes so soft, it just falls off), or you can also serve it with the bones in it. İts really tasteful.

Then I advice you not to eat in any lokanta anymore Many turkish recipes that contain kuşbaşılı are also cooked together with a piece of kemikli et Not everywhere obviously but believe me, its the known secret of the chef cook

yeah i can only eat kuzu pirzola, i rearly eat it.but if i see like a bone of leg in my plate i will never have the meal

Ohh such hipocrisy (can someone tell me the official correct spelled form of this made-up word? )

I never ate etli çiğ köfte because the idea of eating raw meat made me feel sick. Untill I realised that when barbecueing I told Kadir to leave my biftek red and raw inside because that's how I like it. Now I eat çiğ köfte with meat too, but still on a rare occasion

The meat in çiğ köfte may not be cooked by traditional cooking methodes but in fact it's not like any raw meat, because of the hot spices, the rawness of the meat goes. So, you can safely eat it. And these days it's very rare to find a real çiğ köfte, because they don't put meat in it, you have to ask.

Do you mean the 'taste' of the rawness goes, or the chance of bacteries that come along with uncooked meat?

Yes, I know. I have a classmate whose housemate makes çiğ köfte himself, with meat And I ate with meat in a restaurant, but when I ate without meat another time, I have to admit I didnt notice that there was no meat in it

I can't eat anything with bones in it either. Just hate the soups with chopped up meat/bones where you pick it up and suck the meat off It's a psychological thing I guess

No, not the taste. Treating the meat with very hot spices, cooks the meat. It's like cooking the fish by just salt. It's something chemical. Çiğ köfte is originally from Şanlıurfa where the temperature goes up to 45 degrees, so treating with the spicies is a way to protect the meat from bacterias etc.

Me, too. I sometimes do not notice if there's meat inside or not

meat in çiğkötfe cooks when it mixes with the hot pepper and spices.i dont think there is any bacterium in it but you should not eat it everywhere

Ah ok Thanks Turquoise. Yes I've been told that too. Im not a great fan of it anyway, just sometimes with a glass of rakı and other meze, but even then I wont eat more than 1 or 2. I love kısır though, now that I think of it, it is some sort of the same, only different structure and less spiced (though that can be changed )

Well I agree on 'seeing', I don,t think it looks delicious, and its a bastard to eat. But Im scared of nothing Only kokoreç and there are some other things in that group of food I havent tried yet so about them I cant tell..

if you wanna try those kind of food like kokoreç first time.pls make sure that you are at the only place that who cooks it best and ask for it

I ate Kokoreç but I didnt like its taste. In France I had eaten a şiş with all sorts of things like that, so that's not what made me dislike it. I love lamb meat, but in Kokoreç its such a strong taste, or its just slimey and fat. Teşekkürler, kalsın

Oh don't start on intestines There's this soup...it's really popular but I can't remember it's name, but it's made of that kind of things, I call it face soup I can't go to a restauarnt with anyone who eats that.

Love turkish food APART from things with bones, intestines or sheep in it

From a turkish pow that's true But I don't know anyone irl (that's not turkish) who would eat any of those things. It's my parents fault

chicken is ok but only grilled. i hate to see bone of lamb or cow in the meal.its so disgusting..

Yazık mı? What about those sweet lambs then where your pirzola comes from?
Frog tastes a bit like chicken, and it's delicious with garlic, butter and parsley.
But bones may indeed be the wrong word here

I ate snails but I dont know what they taste like that much really, because of the sauce I always supposed that they taste should be around the same?

And about the lambs.. For some reason I never think about food that way.

Only, I havent been able to find 'scharrel' eggs in Turkey (I dont know in English, the eggs from a chicken that has had a free life on a farm). That really bothers me and I never like to buy eggs.

I know now at least two things I won't eat in Turkey: kelle çorbası and işkembe! Organmeat - yikes, no kidneys, tripe, liver or other intestine stuff for me. I love biftek, lamb, chicken, most types of fish (though none of the shell-fish range).

I tasted frog too, nice but not too special for the price. Like Elisa said, it tastes a bit like chicken.

The most strange (well...) thing I've eaten was bashishi, raw horsemeat in Japan, delicious!

And Deli, a 'scharrelei' is a free-range egg.

Well the warmth of the hands while kneading it should have something to do with it as well.. At least that's what I've been told..

You would say that with all the free space here there would be lots of free-range eggs, but when I asked Kadir, he said the ones in the supermarket probably are not :-S

Well, looks like I'm not too picky when it comes to food..

There's one thing I'll never eat though. There was a restaurant overhere that used to serve "water rabbit" but actually it's muskrat. I may be prejudiced but the thought of it freaks me out
