Yes , as Tomac said, I preferred to translate that sentence using negation. 

"ham " can be used for fruits which are not ready . [ not mature = immature]

"dığı takdirde" as an alternative to conditional "Eğer  ........sA "

Takdirde can  be used for an alternative way to build a conditional expression.

[*Note that it is not very common and it may not be applied to all conditional situations as may not sound good ]

Such as ;

1 saat içinde gelmediğiniz takdirde giderim. 

I will go [leave] if you don´t come in an hour. 

Bu kapıdan çıktığın takdirde bir daha buraya giremezsin.

If you come out of this door you can not enter in here again.

Çok çalıştığın takdirde başarırsın.

If you work very hard you will achieve.
