The difference is their tense.

ederim is simple tense and ediyorum is present tense.

Okay. Ive been told by two different people well they said not told "hard cheese" does that have some sort of meaning in Turkey?  And "off"/"offffff!" What do thosr mean....its been said in angry situations!?

Did you mean "bad luck" by saying hard cheese or did you ask for its literal meaning?

As a cheese hard cheese could be "kaşar" and its slang meaning is not very good.
