I have no idea why our dictionary suggests gurup for sunset.

"GÃ¼zel bir gÃ¼nbatımı gÃ¶rmek istiyorum." is correct but "GÃ¼zel bir gÃ¼nbatımı gÃ¶rmeyi istiyorum." is better.
gÃ¶rmeyi > gÃ¶r+me+y+i > verb stem+ verbal noun suffix+buffer+accusative case suffix

Why is it better to use a verbal noun in this case, but not in the example you gave right at the beginning Ali kitap okumak istiyor?

Although mi is a seperate word it is considered a suffix and therefore its form follows the vowel harmony rules:

kahve istiyor musun? (present continuous tense)

Consider it like this:
If you add the personal possessive suffix -im to kÃ¶pek (dog) then you get kÃ¶pekim (my dog) - actually kÃ¶peğim but let's just worry about the vowel harmony for now! But if you add the same suffix to domuz (pig) then the 'i' changes to a 'u' so the word becomes domuzum (my pig).

But -mi is a special case and is considered a suffix even though it is not appended to the word. Therefore it still follows the vowel harmony rules and can have the following forms:
-mi -mı -mu -mÃ¼
