If you noticed, open e sound is found in one syllable words, and the words that has same type of vowels in other syllables.

You guessed it right! 

When you say verb+ip duruyor it means that the person is keep doing that thing.

And when you add negative suffix -ma, -me then it  has an opposite meaning.

Böyle deyip durma - Don´t say like this.

The difference is not the meaning but the way of saying:

Bizim evin yolu - Our home´s road

(Bizim) Evimizin yolu - Our home´s road

Writing "Bizim" in the second sentence is optional because you add necessary pronouns after "ev". But in the first sentence you need to specify it because there is no suffixes after "ev".

Matt has already explain it well. But I would like to add more information.

When you are quoting a statement, you change the verb of that sentence to a noun.

For example:

Faruk: Ben eve gidiyorum.

Pekka: Faruk eve gittiğini söyledi.

Your verb could be anything else: söyledi, kaydetti, iddia etti, belirtti, etc. You usually see this type of sentences in news.
